When I was 19, I worked as a short order cook and sandwich maker in a kosher-style deli in the Catskill Mountains of New York. Back in the early 80s, the Catskills—or the “Borscht Belt,” as the area was known—were at the tail end of their mountain resort and night club heyday.

The deli was really a sort of coffee shop in the biggest kosher-style hotel in the area, and that’s where I developed a fondness for lox, also known as smoked salmon or Nova Scotia lox. Lox and eggs, lox on a bagel, lox on pumpernickel with cream cheese and onions, lox with everything.

I also developed a fondness for hot fudge sundaes.
